    ice cream recipie

    just seen this on ice cream recipies youve got to try this one. My partner is a talented amateur chef and he made this one up... its soo nice and realy easy to make.
    Jay’s ice cream

    Ingredients

    400g bar of Cadburys or galaxy chocolate

    500 ml single cream

    Caster sugar to taste (probably about 1-2 oz)

    Gently heat the chocolate in a bowl over a saucepan with a little water in it. Make sure the water doesn’t touch the bottom of the bowl, just the steam. When the chocolate is nearly melted but still has a few lumps in it take it off the heat and continue stirring gently until all melted.

    Allow the melted chocolate to cool down to room temperature.

    In another, larger, bowl gently whisk the cream and sugar together to dissolve the sugar. Make sure the chocolate has cooled then add it very slowly and gently mixing carefully the whole time you are adding.
    When all chocolate has been added and mixed, then whisk until you get the whipped texture you desire.

    Dispense into individual or one big serving dish and freeze until solid.

    (We use Ramekin dishes which take about 2-3 hours to freeze)

    Variations

    Vanilla ice cream- Use double cream instead of single and method above but obviously without chocolate and add a few drops of vanilla essence (extract comes out too strong) at the end.

    We have put all sorts of things in it. Here are just a few. Let your imagination run ….

    Malteasers- try adding a few Malteasers to it before it sets.

    Grated chocolate or chocolate chips mixed in just before it goes to into bowls.

    Fresh garden mint chopped finely and mixed in just before it goes into bowls gives a lovely fresh minty flavour. Add grated chocolate for mint choc chip…

    Raspberry Ripple- Use raspberry coulis bought from supermarkets (Waitrose have it) With a cooks syringe bought from cook shop inject some raspberry coulis into ice cream once in bowls and swirl to create ripple effect.

      Thank you for taking the time to give us that recipe Country Girl. I'm pretty competent on soups, starters, fish , and mains but sweets I have always been quite week on - probably because it's not my favourite course and so gets less attention - selfish or what? Well yes, just selfish! This one sounds just lovely and easy. That's for me. Thank you for it.

        If I had ago at making this ice cream in dish,would it need stirring part way through freezing? Sounds delicous.I've not been on recipe threads before,cos I'm not really one for cooking much(only my veg gets special treatment from me),but I might give this a go.

          yummy ice cream recipies

          I have been reading all your lovely ice cream recipies and am tempted to buy an ice cream maker. I am willing to spend up to £50, can anyone recommend a make. Have been looking on the internet but there are loads of different types. Dont mind spending the money if it works properly. Thanks

            no , no need to stir, just put in dishes and leave to freeze. Simple, no machine no stiring, no eggs.. just great tasting ice cream! enjoy

              lynnew, there are basically two types of ice-cream maker. the expensive ones with a freezer unit which cost about £200, these are only suitable if you make tons of ice cream and have the space to leave them out as they react badly to being moved. the cheap ones work with a gel that stays very cold for long enough to complete the process for one batch of ice cream. these cost between twenty and thirty pounds. They all much of a muchness, I would tend to go for a magimix or other well known make.

                  I like to make ice cream with more exotic flavours. After trying cinnamon ice cream on holiday in Paris, I tried to make some myself. Turned out wonderful. Mango ice cream is also lovely. Try serving it with a passion fruit sauce. Simply pass the passion fruit pulp through a sieve, discard the seeds and add a little sugar, sweetener or honey, if desired. Lime or ginger also goes well with mango.

                    one more to add to the list to try when you get your machine is guinness ice cream - v popular in Trinidad! And very nice too -there are loads of recipes on line if you google for it!! Try freecycle for an icr cream maker - there always seems to be someone giving one away for free...

                      How about ice creams based upon other deserts? You can make the basic ice cream as per country girl's recipe and add the following for different deserts:

                      Chocolate brownie: cocoa powder, chocolate chips
                      Cheesecake: crumbled digestive biscuit, any fruit you want (for example, strawberries, lemon, lime for Key Lime Pie etc).
                      Chocolate Orange: cocoa powder, melted chocolate, orange juice, orange rind
                      Jam/Golden Syrup Sponge: sponge cake pieces, jam/golden syrup
                      Banoffee Pie: banana, toffee chunks, toffee sauce
                      Rocky Road: chocolate chips, marshmallows, chocolate sauce, crumbled biscuits, muffin pieces
                      Carribean Delight: banana, rum, raisins, coconut
                      Baked Apple: apple, cinnamon, raisins, honey
                      Summer Pudding: blueberries, strawberries, blackberries, blackcurrents, sponge pieces
                      Black Forest Gateaux: black cherries, chocolate chips, cream, chocolate sponge pieces, a splash of Kirsch cherry liquer (if you want)
                      Pina Colada: pineapple puree, coconut milk, grated coconut, rum (I actually tried this in Spain. Yum!)
                      Tiramisu: coffee, cocoa powder, sponge fingers

                      Just some ideas. Maybe you could make it with your favourite desserts?

                            Green Tea Ice cream, Guinness Ice cream & Tomato Ice cream!

                            Green Tea Ice Cream

                            2 egg yolks, 2 tablespoons dry green tea, 1 tablespoon sugar, 1/2 vanilla pod, 1 1/4 cups double cream, 1/4 cup caster sugar, 1 1/4 cups milk, 2 tablespoons boiling water

                            Take the dry green tea and soak in boiling water with the tablespoon of sugar for 10-12 minutes.
                            Into a saucepan put the vanilla pod and milk and gently bring to the boil then pour this over the tea. Leave to stand for 5 or 6 minutes.
                            Beat the egg yolks with the 1/4 cup caster sugar in a separate bowl and then strain the milk mixture into it.
                            Transfer to a saucepan and gently heat, stirring all the time, until the mixture is thick. Leave to cool.
                            Whip the double (heavy) cream and fold into the cooled tea mixture.
                            Transfer the complete mixture into an ice cream machine & churn til set.


                            Guinness Ice Cream

                            Guinness 350 ml
                            double cream 350 ml
                            3 egg yolks
                            castor sugar 75 gm
                            vanilla essence 1/2 tsp

                            Pour the Guinness into a large saucepan (it will froth up when heated) and heat to simmering point
                            Allow to simmer until it has reduced to 100ml
                            Once the Guinness has reduced place in a cold container and place in the freezer until cold (if it is too warm it may curdle the egg yolks)
                            While the Guinness is simmering, place the egg yolks cream, castor sugar and vanilla essence into a glass or stainless steel bowl and whisk until thickened.
                            Pour the Guinness into the egg mixture and lightly whisk to combine
                            Pour into the ice cream machine

                            I also found this on line -but have yet to try it!

                            Tomato Ice Cream

                            Tomato juice 350 ml
                            cream 350 ml
                            egg yolks 3 pc
                            castor sugar 75 gm
                            Thai sweet chilli sauce 2 tsp

                            Pour the tomato juice into a large saucepan and heat to simmering point
                            Allow to simmer until it has reduced to 150ml
                            Once the juice has reduced place in a cold container and place in the freezer until cold
                            While the juice is simmering, place the egg yolks cream, castor sugar and chilli sauce into a glass or stainless steel bowl and whisk until thickened.
                            Pour the juice into the egg mixture and lightly whisk to combine
                            Pour into the ice cream machine

                            Given the flavours involved with this ice cream it is suggested as an accompaniment to a cheese based dessert!
