  • what's the best homemade pasta dough recipe?

    i have a pasta maker, and i usually just follow the dough recipe on the box, or on the flour packet, though sometimes i find it comes out not quite to my liking, sometimes tasting too eggy or the texture being not quite right.
    so i'd like to know if any of you have a pasta recipe which you think is delicious! what ratio of flour/egg/oil do you use?

    600g "oo" flour
    12 egg yolks

    Pile the flour onto a worktop and make a well int middle, pile the egg yolks in and just bring it together till you can need it into a ball of dough.

    Its so easy to make but I dont make it as much as I should.

      redadmiral, is your pastamaker one of the ones that you put all the ingredients into a tub, which mixes the dough, and then the dough is extruded through different discs, ie tagliatelli, spaghetti, etc, or is it just a roller, whereby you make the pasta dough, and just roll it through the machine?

        no, i make the dough by hand and then roll it through the machine.
        thanks for the recipe piglet - i think the others i have used have had whole eggs, not just the yolks...
