  • Traditional Irish Pudding

    Help Im looking for a traditional Irish pudding /sweet recipe to serve at the daycare centre where I work anyone got any easy cheap but yummy ones

    Not sure what this tastes like but it is Irish!

    Carrigeen Moss Pudding (from Simply Delicious)

    Approximately 1/4 oz (8g) Carrigeen moss
    1 pint (600ml) cold milk
    Grated rind of 1/2 lemon
    2 tblsp (30ml) sugar

    Take as much Carrigeen as will fit in your fist when almost clenched. Wash it in warm water for a few minutes, removing any grasses or other foreign bodies. Place the mos in a saucepan with the milk, grated lemon rind and sugar. Bring slowly to the boil and simmer gently for 15-20 minutes. Strain through a sieve, being sure to scrape all the jelly into the bowl. Stir well and transfer the mixture into a wet mould or serving bowl. Leave to set in a cool place overnight or for several hours before turning out onto a serving dish. Serve with cream and strawberry or raspberry jam.

    Bananas with Irish Mist (same book)

    4 bananas
    2oz (60g) butter
    2dsp (20ml) caster sugar
    2dsp (20ml) Irish Mist

    Melt the butter in a heavy frying pan. Peel the bananas and put them in the pan, turning them carefully in the melted butter. Cook them over a low heat for about 3 minutes either side until they are heated through. Put them on individual plates and keep them warm while you make the sauce. Add the caster sugar to the remaining butter in the pan. Stir over a low heat until the granules have dissolved. Add the Irish Mist, stir well and bring the mixture to the boil. Spoon the sauce along the top of the hot banana and serve.

      Caragheen pudding is like blancmange Shirley. Rather nice - soft & sweet!

        Thanks for that Flummery, always wondered what it was like but have never seen the Carrigeen to buy so haven't tried the recipe.

          Carrigeen is a type of seaweed, and I think it acts a bit like gelatin.

          Traditional irish pudding would be apple pie for most people. Or jelly and ice cream. Sorry. Stewed rhubarb and custard is also another very traditional pudding here.

          I'll have a look in some of my more traditional books tonight to see if there is anything that is more "Irish" than traditional, IYKWIM.
