Hi, I'm fairly new on here but I thought I'd share this recipe for cauli soup with you. There are no definate measurements, just keep tasting and see how it goes!!!! I had a cauli that was probably past its best, but it didn't have any brown spots on it, so that was a bonus I sauted a finely chopped onion along with a couple of sticks of celery plus some of the cauli stalk finely chopped and a diced potato. I added a bayleaf and after about 5 minutes added some (shock horror) ready made veggie stock - about a pint. I let that come to a simmer and added the cauli florettes along with a good pinch of salt. Once the cauli was cooked through (about 20 mins) I used a stick blender to get it nice and smooth, checked the seasoning again and served with a swirl of truffle oil in it. I couldn't beleive how creamy it tasted even there was no cream or milk in it

I know this was like 2008 an all - however, I make no apologies for bumping this thread. I had a spare cauli, and as usual when I have spare something, or, almost rotting something - I do a search on here to find a recipe!
I made this tonight and it is delicious. Was a little sceptical of the absence of milk or cream, but, it certainly did not need it. Ok. Some cream would have been a lavish addition (maybe tomorrow with the leftovers!)

I too can recommend home made Cauliflower Soup, it is surprisingly good and a firm fave in our house.
Peel, chop and sauté and couple of onions and a clove or two of garlic until golden, add cauliflower broken in florets and a peeled diced spud or two. Add some water or stock to cover, bring to the boil, cover and simmer for about 20-30 mins, season to taste with salt and freshly ground black pepper then blitz it all with hand blender.
I first made this soup as Cauliflower Cheese soup, with the addition of cheese, stirred in just before serving but tried it without one time and preferred just plain cauliflower non cheese soup, but that I guess is a matter of personal taste.
Cheap, Easy to make and creamy soup.

In the cauli soup, before adding the stock, try stirring in a teaspoon of curry powder or grated nutmeg to the sweating onions and sautee about a minute then add the cauli and stock. It gives it a nice little kick.
