    Hi guys!
    I am trying to remember something i did years ago where little gem lettuce, peas, and stock were simmered together on the stove but i can't recall what else if anything was in it and what to do with it!?!?
    could any of you help?
    I am having friends round for dinner tomorrow to celebrate my birthday and am doing twice baked emmental souffle to start, pannacotta and raspberries for dessert and was hoping to do chicken breast stuffed with spinach and wrapped in bacon. I wanted something light to go with the chicken and thought the lettuce and pea thing would be good.
    Any help or alternatives would be gratefully received.

    Is this it?

    Saute of Peas and Lettuce

    1kg fresh peas, podded
    80g unsalted butter
    a clove of garlic
    2 Little Gem lettuces, torn or sliced.
    6 thin slices of pancetta or prosciutto cut into strips
    a little caster sugar
    Maldon salt and pepper

    Heat ½ litre of water with 20g of butter, sugar and salt. Bring to the boil and plunge the peas in to this for 3-5 minutes, depending on the size and then drain and refresh under a cold tap.

    In a sauté pan add the butter and gently fry the garlic without browning. Add the prosciutto, lettuce and peas and cook together for just two minutes - season with salt and freshly ground black pepper and serve with a knob of butter and plenty of chopped flat leaf parsley.

      Thanks very much, sounds good and is quick so i dont have to spend ages in the kitchen.
      It was years ago i last did it so dont know if its the one but i will do your recipe.
