          I'm going to buy that courgette book when I get paid next week. I'm sick of having heaps of courgettes in the fridge and not knowing what to do with them. We get an organic veg delivery, which likes to send us about four courgettes a week in the summer. I've now got round to altering the veg delivery so we just get fruit for the rest of the summer as I have enough veg from the garden at the moment, but I'm now starting to harvest my Gold Rush courgettes, just to add to the already mountainess pile.

          I made courgette cake a while back and it's fab. I'm also going to try the pasta sauce and frittata mentioned above. My other favourite is just to slice them lengthways, dry grill them on the griddle so they are charred and then marinate them in olive oil, lemon juice, lemon zest and black pepper. You can eat them on their own as an antipasti or serve them up with whatever else you are cooking.

            I have been told to pick them when they are baby. Still with the flower on and BBQ whole.

                  but can you FREEZE courgettes at all? or are they one of those things you just have to eat whilst they're in season?

                  I've made some pasta sauces with tomatoes, courgettes, onions etc for the freezer, but it would be nice to just freeze courgette slices or something.

                      Brilliant! Just open freeze the slices raw and then bag them up?

                      Think I should invest in a feezer book actually! I under-estimated how much I'd end up with!!

                        My freezer book says to blanche them for one minute but there is a thread where everyone says they don't blanche vegetables before freezing. (I do). With courgettes I cook them with some onion ready for using in frittata and then freeze. My book is How To Freeze by Carolyn Humphries. £6 from WH Smiths.

                            Courgettes recipes

                            yes you can freeze courgettes either row in thick sliced or blanched very quicky in oil. You can make soup and then freeze it. You don't need a book how to freeze courgettes....really you need several freezers and do we really want to eat courgettes all year round? Sometime it is nice to have a gap between the same produce.........expecially courgettes......they keep staring at me with love and affection and I pretend not to see them!!!!

                              Vicki, you can saute the sliced courgettes in butter for a minute or so then freeze the whole lot- butter and all. They're then just ready for adding to soup, stew or fritatta. Delicious in chicken casserole. But Don does have a point about the seasonality of things instead of having them all the year round.

                                Just downloaded choc cake recipe(ok...son did!).Iv'e picked a courgette that has gone to mini football size...can I still use it for the cake,or because it has overgrown will it taste differant?
