    The soup recipe that pigletwillie gave is excellent, I put a wedge of boursin cheese into the soup and its gorgeous

      roast courgettes

      just baked them, cut into large lumps (!), smashed garlic and chopped rosemary. Then cooked in oven with the roast for about 45 minutes.


      cooked them last week with small new potatoes, halved carrots, rosemary , black pepper and a slug of oil.

        Just made the chocolate & courgette cake and added a thin layer of melted chocolate over the top. It is gorgeous!!!!!! Yum yum!

          Courgette pasta

          Courgettes
          Long pasta
          Green pesto
          Pine nuts
          Olives
          Parmesan

          Thinly slice courgettes and fry gently in olive oil and butter till tender
          Stir into cooked pasta with a tablespoon of basil pesto
          Sprinkle with toasted pine nuts, olives and grated parmesan & black pepper

          Courgette & Tomato bake

          Courgettes sliced and roasted
          Tin of chopped tomatoes (or mashed skinned fresh ones)
          Onions
          Garlic
          Herbs / red wine

          Chop onion and garlic and sweat in olive oil
          Add tomatoes and seasoning/herbs/wine
          Simmer to reduce for a bit
          layer courgettes into an ovenproof dish with the tomato sauce
          If you want to freeze, do it at this stage
          If not, top with grated cheese & bake in oven

          Serve as a veg side dish or with some pasta

            I love courgettes lightly fried with onions, add some chopped tomatoes, serve with either goats cheese or low-fat cream cheese (I'm dieting) melting on the top. Delicious.

              yesterday i made two courgette cakes and two trays of the chocolate and courgette. my ex took some to his dad who thought the cake was great until he was told what was in it te he.
              when i took the allotment on i didnt realise i would turn into a WI contender, i have a freezer packed out with goodies and have even made my first pot of blackberry jam

                how about courgette chutney???? I made some last night with my yellow courgettes.

                Ingredients
                4 lb courgettes
                2lb 8oz onions
                2lb 8oz brown sugar
                Large piece of fresh ginger
                1/2 tspn pepper
                2 pints malt vinegar
                2 heads of garlic
                2lb 8oz tomatoes
                1 tspn cayenne pepper
                2 tspn salt
                Method
                Chop all the vegetables, add vinegar, sugar and spices and bring slowly to the boil, stirring now and again. If the courgettes have a tough skin, you can peel them and compost the skins.

                Simmer for about two hours (don’t forget to stir as it will stick) until thick.

                Pour into heated jars and seal.

                Notes:
                Needs at least three months to mature

                  Marrow and Ginger Jam

                  Meant to post this ages ago - sorry for the delay Mrs Dog

                  • 1kg Marrow or courgette
                  • 2-3 unwaxed lemons (zest and juice of)
                  • 1 packet lemon jelly
                  • 1 kg sugar
                  • 8 cm piece of fresh ginger (bruised and in a muslim
                  bag)

                  Remove seeds from marrow and cut into chunks.
                  Layer into large bowl with sugar, lemon zest, lemon juice
                  Dangle ginger into it and leave overnight.

                  On a low heat warm up mixture gently until sugar has dissolved. Keep the muslim bag hung over side of pan and crush every so often. Add jelly.
                  Simmer until marrow goes translucent and the liquid gets syrupy.

                  Warning: this last bit takes longer than you'd think because it's not a rolling boil like you do for jam but a simmer. Pour a large glass of wine and be prepared to wait!
                  Do all the normal set tests and bottle. Stuff is a bit like a lemony gingery marmalade but twice as nice. Keeps for years too!

                      I made the chocolate courgette cake (riverford) first as I thought that would be the most popular in our house. Then I made the courgette cake (foodiesite) this week and it didn't make it into the tin. Yep it's that good.

                        same here, i thought the chocolate would be the popular choice but the courgette cake was the best. i took a cake to squashysu's sisters leavng party and it went really quickly, although SS refused to try it !
                        made the chocolate cake for the allotment open day and cut into small pieces for everyone to have a try.

                            Fab site, thank you! I came on for a 'quick recipe' for my first time grown courgettes here in France. Eaten so many but still not bored! Cant wait to try the cakes!!
                            My fave recipe that I've done so far is similar to pigletwillie...

                            1 kg courgettes - any size and colour
                            250g potatoes (suitable for mashing), peeled or scrubbed
                            2 cloves garlic, peeled & crushed
                            1 medium onion, peeled & chopped
                            30ml olive oil
                            150g soft cheese (I sometimes use boursin (garlic one)
                            Handful fresh chives, chopped
                            1 1/2 pints chicken or veg stock
                            Wash the courgettes and chop them into chunks. Cut the potatoes into cubes (smaller than 1 inch).
                            Heat the oil or butter gently in a large pan. Add the onion and garlic.
                            Gently cook for about 5 minutes, to soften. dont brown
                            Add the potatoes. Stir. Cook gently, covered, for about 15 minutes, until about half-cooked.
                            Add the courgettes and stir. Cook for about 5 minutes until softened, stirring occasionally.
                            Add 1 1/2 pints of stock - just enough to cover the contents of the pan. Bring to the boil and simmer gently for 10 minutes, or until the potatoes are soft.
                            Remove from the heat and liquidise the soup. I use a hand blender put into the pan.
                            Add the Cheese & herbs. Season to taste with salt & pepper. You can also add a swig of cream for luxury....mmmmmmmnn my family lurrrv this soup.
