  • Courgette recipes

    Hi to you all,

    Have just this minute registered and wondered if you could help me out with recipes for a glut of courgettes. Have grown them in tyres around my allotment, tyres are stacked in two's and have been very successful. Am also growing turks turban squashes which haven't been as successful but I'm ever confident.

    My glut's not started yet - we had one super-size courgette earlier in the week, which I halved, seeded, and stuffed with a mixture of pork mince, couscous, chopped tomatoes (seasoned with cumin, fenugreek, little bit of cayenne pepper) - and baked for 40mins. There was such a lot that we had the second half the following night, this time covered in cheese sauce and baked for 20 mins.

    My favourite quick courgette dish is to coarsely grate the courgette(s), and then stir fry them with butter & olive oil in a wok or other large open pan - very quick, and delicious. You can throw in seasoning, chopped fresh herbs etc as you fancy. Not really a recipe, but worth experimenting with.

      How about courgette cake? I seem to remember Slug may have had a recipie for this?

      Slug, do you stll have the link to hand for courgette cake?

        strangely i just mentioned this in another thread. This morning we had courgette 'cake'. I didn't follow a recipe so I dont know if it's the same or different as previously posted. I just grated a large courgette and an equal quantity of potato. I squeezed out some of the water. Fried off some chopped leek, added the courgette and potato and fried for about 10mins until cooked, then added 6 beaten eggs and cooked until lightly brown on both sides. It was lovely for breakfast with baked beans. I'm sure you could easily adjust it for an evening meal with maybe garlic and something like chick peas?

          Hi - I only registered this morning and am loving this forum!!!

          My courgettes are coming on strong - well, the one plant that seems to have survived the slugs but its providing loads so far!

          Have you tried red onion and corgette quiche? Very nice, I'll try to remember where the reciepe is at some point. However, have you tried Delia's website - it's great!: http://www.deliaonline.com/

            One of my favourites is courgette frittata. Simply gently fry sliced onion and sliced courgettes with black pepper and garlic until they have softened a little but not coloured. Add 5 beaten eggs and cook on a gentle heat until the underneath is set. Then put under the grill to set the top. You can put sliced tomato on the top if you like before it goes under the grill. It goes great with sausages.

              Or use LJ'S recipe and add some grated cheese to the eggs and on the top and bake it in the oven. Or, put the above mixture -(Without the eggs)in a buttered oven dish with some very thinly sliced raw potatoe.mix it all together, pour over a white sauce, top with some grated cheese and bake in the oven at 160 degrees for about 45 mins. A great favoutite in my house and as L J says great with sausages.

                Just what we've had for tea today LJ! Very yummy too - and what a scrumptious sounding alternative Alice! There's plenty of courgettes to try all of these out and more!!

                    amazing what vegetables a 3 year old will eat when they help produce them isn't it! I'm finding mine is eating all sorts!

                      There's a nice sauce you can make for pasta. Grate up 2-3 courgettes and fry very gently a mixture of butter and olive oil - put in more butter than you think you'll need. Fry until they are just starting to colour, then chuck in a good handful of parmesan and lots of freshly good black pepper. Toasted pine nuts and crispy bits of bacon are a good addition too. Mix into the pasta of your choice.

                            Excellent LJ. I was thinking of buying it for ages then I got it free when I was MOM & have read it cover to cover marking the ones I fancy trying. I nearly planted extra courgettes to make sure I had a glut but decided against it
