    I bet the Courgette Cake is good I am going to make it...bet its like Carrot cake.

      Pour into heated jars and seal.

      Notes:
      Needs at least three months to mature

        I made the Courgette Chocolate cake and its great....its like jelly on the inside and you cant tell its cougette.

          I bought the book recently, It is very good apart from the hideous cover -why couldn't they pick an illustrator who can actually draw well -like me for instance hee hee!
          My son keeps asking, "Mummy, why has that man got a beak?"

          There are loads of good recipes, and I'm going to need them as I've already harvested 12 courgettes this week, and that's just from 3 plants that are producing. I have about 20 more at various stages of development, so the glut is just around the corner, yay!

          You can buy it a bit cheaper on Amazon, £5.90 or so inc postage.

              If you put courgette into the search bit of the vine, we had a really good thread a while ago with lots and lots of ideas of what to do with your courgettes (or in my case - marrows!)

                Been looking for a decent cuke relish recipe to use up my glut (6 today alone!)!! Do you think this would work if I substituted cuke for the courgette?

                    This is lovely and fresh tasting, and uses up the odd tomato, courgette, onion and spud etc.

                    Danish Fish Casserole (Serves 2)

                    I small onion, chopped finely
                    1 small leek, sliced thickly
                    Half teasp fennel seeds crushed lightly
                    1 large or 2 small courgettes, grated coarsely
                    Couple of new potatoes
                    75ml skimmed milk
                    150ml fish stock
                    200g firm fish (cod/haddock/monkfish/coley) cut into large chunks
                    1 big tomato deseeded and diced (but not peeled unless you must)
                    Some chopped fresh parsley
                    Tiny bit of orange rind (really tiny bit – couple of scrapes only)

                    Heat a large, non-stick pan and put in a tiny amount of oil – cook the onion, leek and fennel seeds for 5 minutes until soft but not coloured.

                    Add courgettes, potatoes, milk and fish stock. Bring to the boil, cover and gently simmer for 15 mins until the potatoes are tender. Stir in the fish and simmer for 5 minutes until cooked.

                    Meanwhile, mix the tomatoes, parsley and orange zest. Check the seasoning of the stew and serve it in bowls with the diced tomato mixture sprinkled over.

                    This is from a Weightwatchers book and is only 2 WW points if you use a spray of oil instead of glugging.

                        another courgette cake is in Nigellas how tobe a domestic goddess and has a lime curd and cream cheese filling. My OH didnt believe it was courgette thought it was a large amount of lime zest!! ;-)

                          Marrow and Ginger Jam

                          1kg Marrow or courgette
                          2-3 unwaxed lemons (zest and juice of)
                          1 packet lemon jelly
                          1 kg sugar
                          8 cm piece of fresh ginger (bruised and in a muslim
                          bag)

                          Remove seeds from marrow and cut into chunks.
                          Layer into large bowl with sugar, lemon zest, lemon juice
                          Dangle ginger into it and leave overnight.

                          On a low heat warm up mixture gently until sugar has dissolved. Keep the muslim bag hung over side of pan and crush every so often. Add jelly.
                          Simmer until marrow goes translucent and the liquid gets syrupy.
                          Off to have a go at this one again this year. It's great. Think you mean a muslin bag.

                            Personally I'll be using a multi dedoninational bag that does'nt have anything against Druids or Wiccans.

                            That aside, my fave for the 'gettes is sweat some finely sliced mixed peppers in butter with a stock cube!!, add the diced/roll cut gettes cook until some water is released, remove from heat and eat or cool by spreading on a tray, if using as salad, replace butter with olive oil. Got a carrot cake recipe? add or replace carrots with cougettes or beetroot!, how about all three?, I will be trying this soon, hoping for a slightly spiced fruity cake with purple, orange and green flecks in it, my customers will (I hope) love it!.
                            Eat well, live well, drink moderately and be happy (hic!)

                              Courgette and Brie Soup

                              1lb courgettes, diced
                              2 medium potatoes, peeled and chopped
                              1 med/large onion chopped
                              2 pints veg stock
                              8oz brie, broken into small pieces

                              Put everything in pot EXCEPT brie and allow to simmer until everything is soft. Take off heat and stir in brie. Blend. Season with salt and pepper if required. Enjoy.

                              This receipe is similar to another couple of recipes already on here, which I will be trying
                              Very easy and tastes delicious.
                              If we can really understand the problem, the answer will come out of it, because the answer is not separate from the problem.

                                very simple no cook courgette recipe i recently seen on the bbc good food website:-

                                you will need...
                                courgettes! (1-3 depending on size)
                                250g ricotta cheese
                                50g toasted pine nuts
                                handful of chopped basil
                                olive oil
                                balsamic vinegar
                                salt and pepper.

                                cut the courgette lengthways very thinly (i used a swivel head vegatable peeler), lay the slices out on a plate which has had olive oil and balsamic vinegar sprinkled on, lay them flat so that they dont overlap, once the plate is full drizzle some more oil and vinegar over the top and put in the fridge for 1/2 an hour at least (can be left for longer).

                                mix the ricotta, basil and pine nuts together and season, place a teaspoon of this mixture onto the end of one of the courgette slices and roll up, place on a separate plate end up, keep doing this until ingredients are used up, drizzle again with oil and vinegar.
