  • Horseradish sauce that keeps

    Hi I would like to make some sauce as gifts but can only find recipes that have cream in (have searched on here and not got any joy). Does anyone know of a recipe for sauce that will keep from making it in autumn til xmas? The plan was to save money on xmas pressies and give people sauces, pickles and jams.....

    Also how do I know when the horseradish is ready to dig up? It's in a large pot.

    Just found this - i guess this would do? I would just have to add the fact that it needs to be refrigerated on the label.

        looks very similar to a recipe that i've got,mine suggest adding a spoonful of above to a dollop of cream before serving. lesson i learnt if doing fiddly/expensive sauces or jams etc as pressies(you dont always get a lot for what you put in!)look out for smallish jars,a friend of mine saved babyfood jars for me;that makes me sound really tight dont it?!just the things people drop hints about wanting tend to be the things that cost the most & get the smallest yields(fruit jellies,etc!)

            Thanks A&D I do have lots of baby jars (with having a baby aorund!) and I have been saving all my jam jars for about 2 years plus peanut butter jars and that sort of size.

            I have never made anything like them before but it would be nice to think I could give those sort of presents!

              I've been doing similar for the last couple of years & most people really appreciate;you get the odd few that say "if you havent got much money"just"make some of that stuff like last year"&sooo want to point out that it actually took you ages to make AND other than the homegrown bits ingredients do have to be bought!!That said i got a major bargain last week;a friend had to clear & "dump"a load of stuff from a bankrupt florist recently~guess where he "dumped" the baskets & cellophane?!will save a fortune @ xmas on packaging!because be warned what you think is gonna be a money saving pressie can soon mount up!but like i said the majority really do appreciate.a couple of friends always open my pressie 1st as they know its gonna contain brekkie to see them thru opening the rest!

                  Janeyo,this recipe may interest you.(Readers Digest,Food From Your Garden)

                  Tomato and Horseradish Relish

                  4lbs. ripe tomatoes
                  1 large onion
                  2large apples
                  3/4pt. vinegar
                  2 tspns. pickling spices
                  2 tspns salt
                  1/2 tspn cayenne pepper or paprika
                  1lb. sugar
                  3 tblspns grated horseradish

                  Skin tomatoes,peel and chop the onion,peel , core and chop apples.
                  Cook to a thick pulp,stirring at first to prevent burning.
                  Meanwile, boil vinegar and spices together for 10 mins. Strain and add to tomato pulp with salt and cayenne.
                  Boil to reduce to a thick,creamy texture then stir in sugar and horseradish.
                  Cook for 10 mins. Pour into hot jars,seal and sterilize.
                  To sterilize,put a layer of cloth,cardboard( or whatever will stop the jars touching bottom of pan) into large pan. Put in jars,fill with hot water up to top of jars and bring to boil. Boil for 20 mins.
