  • Bramble Jelly

    Made some Raspberry jam today,now fancy having a go at Blackberry/Bramble jelly.
    Nyone know how to make it?Is it the same as jam and then strained?
    The greatness comes not when things go always good for you,but the greatness comes when you are really tested,when you take,some knocks,some disappointments;because only if youv'e been in the deepest valley can you ever know how magnificent it is to be on the highest mountain.

    Jellies are normally made by gently stewing the fruit to get all the juice out, straining through a jelly bag and then boiling up with around 1lb of sugar to 1pint to juice. The actual proportions vary depending on the fruit, I'll try to find the recipe I use for blackberries.

      I used to work in the QA dept of a jam factory. You might have to simmer the juice for a while to get the water to evaporate, ie to increase the sugar/solids content or the jam might have problems setting an alternative is to add some pectin

        We did something like this last year.

        I think if you look HERE, you should find it useful.> Have fun - bramble jelly is fantastic. Just remember not to force the juice through the jelly bag or muslin or whatever you have to hand or the resulting jelly will be cloudy.

            Ooh, bramble jelly. My Gran used to make it, but the shop bought stuff just isn't the same. I might have a go at this....especially as number 2 allotment still has a fair few brambles up at the top. Anyone know where to get a jelly bag?
            Into each life some rain must fall........but this is getting ridiculous.

              I think you can use almost anything to strain the juice. There was a thread somewhere started by Piskie and I seem to remember people suggesting a piece of cotton, close weave netting etc.

              I should think that if you look somewhere like Lakeland you should be able to find the real "McCoy"

                You can buy jelly bags in various places, it's basically a piece of fine mesh stitched into a cone shape. You have to let the juice strain out overnight - there's no rushing it! I made some bramble and crab apple jelly last year, it was sublime. The apples help the set of the jam (maybe brambles are low on pectin?) but you can buy jam-making sugar which has added pectin in it instead.
