I just thought I would share a recipe that I made for a summer dinner garden party this weekend. Everyone loved them, and the great thing is they were something I quickly mixed up just before everyone come (only because I forgot to get the cheesecake out of the freezer).
I served the scones with a blob of whipping cream on the side and asked everyone to pick their own strawberries to add on the side.
Recipe:
2 cups (280 grams) self raising flour,
1/4 cup (50 grams) granulated white sugar,
2 teaspoons (10 grams) baking powder,
1/8 teaspoon salt,
1/3 cup (76 grams) cold unsalted butter,
1 large egg, lightly beaten,
1 teaspoon pure vanilla extract,
1/2 cup (120 ml) heavy whipping cream,
Egg mixture for brushing tops of scones: 1 large egg, lightly beaten,
1 tablespoon heavy cream
Preheat oven to 375 degrees F (190 degrees C). Line tray with parchment paper. Add together the flour, sugar, baking powder and salt. Rub butter into mix making coarse crumbs. Mix together whipping cream, beaten egg and vanilla, then add to the flour mixture. Stir till combined. knead dough on a floured surface. Roll dough into a circle about 7 inches and about 1 1/2 inches thick. Cut circle into 8 triangular sections (you can also use cutters). Brush with mixture. Bake for about 15 minutes.
