  • potato and aubergine gratin

Hi we had this for tea ( with a chop and climbing beans from the garden). It was delish, first time I have made gratin of any kind!

As many spuds as you think will fill your oven dish, sliced and parboiled. 2 large aubergines, 1 med onion, 1 clove garlic, small pot of cream ( i used single) and about a half cup of milk.

I didn't measure anything as it was a bit of an experiment!

    Parboil spuds
Slice onion and soften in pan with the chopped garlic. Set aside. Slice aubergines and soften in some olive oil or butter. Set aside.
In a large oven dish, layer the potato, onions and aubergines covering with the cream/ milk as you go. Season it now if you prefer, I did my onions and aubergines whilst they were cooking first.
Top with grated cheese and bake for about 25 mins - my oven is either on or off (is coming out next week for new kitchen to go in- yay) so no idea what temp it was either but think was about 150 degrees c.

I guess it could be a main dish or a side dish. We had ours with chop and beans from the garden.
