  • Veggie recipes using mashed potato?

    Well we dug up the Vales Emerald freebies and they've suffered quite badly with slug damage. So they won't keep and I think they'd be best eaten mashed?

    So has anyone any good veggie recipes using mashed spuds that adapt well to being eaten in summer with salad?!

    Hey Manda

    What about "crushed"? LadyWayne is a big fan of this. Diced or cut into small chunks, lobbed into boiling water for a minute or three, then into a baking dish with several cloves of garlic and a few sprigs of rosemary. Roast in the oven for 30-45 minutes (depending on size of chunks and preference for crusts) toss them around about halfway through to get the "crushed" effect, et voila!

    Can be eaten cool with a dollop of mayonnaise too.

      you could cut them into chunks, discarding teh munched bits and roast in olive oil and chopped rosemary. I had this last night with some courgettes and carrrots chucked in as well.

      What about good old fashioned cheese pie, mash spuds (you could boil an onion in with them) with cheese and a bit of mustard, , put in a dish, more cheese on top, maybe some sliced tomatoes and brown under the grill.

          If the spuds have been de-beautified by the demon slug - why not shred them and make hash browns or a bit more upmarket - and dare I say pretentious - and so some Rosti?

          Use crushed or mashed and mix with either home fried onions - or the dried packs of fried are fine - mix with a few herbs and grated cheese. The mixture makes a great savoury topping to make a cottage/shepherds pie more interesting or can be pattied up and served as a side veg or on its own as a supper meal perhaps adding a few bits of crispy bacon or chorizo to tart it up.

          I wonder if you could get away with slicing and using atop a Lancashire Hotpot - you could hide the wonky bits beneath the overlay.

            I'm the sort of vegetarian that doesn't eat meat!

              If you are a veggie you can always replace bacon etc with the meat free looky-likey they sell in supermarkets - or perhaps something like smoked mushrooms if there is such a thing. But I'm sure if you're an experienced veggie you will know better than I all the tasty add-ons you can replace meat items with.

                I know some vegetarians still eat fish - no idea if you do or not Manda, but if you do maybe fishcakes would be a good way of using up the spuds?

                    SBP - I've been trying to find where you can buy betty crocker bacos. I'm sure I bought them from A**A originally but they're not in the online shop. Do keep an eye out for them - preferably not the glass jobbie!

                    I know for sure these are fine for veggies. I had a Turkish (and Muslim) lady staying with me a few years ago and there was no sign of a pig donor in sight - either for the base product or the flavour - such is modern science - a product made from soya base! A great veggie add-on for a nice crispy tasty ingredient for salads or whatever takes your fancy.

                    Just found 'em at T***O at £.139 a pack!

                      Thanks quark1 I'll keep an eye out for them. We do use the fake-bacon slices chopped up for a bit of a salty/savoury tang in bakes and so on...not in the slightest bit bacon-like I have to say. But I've been a veggie so long now that the smell of meat (even bacon) cooking just makes me think yuk!

                          Could it be called coddus carrotus or even butternut squid ???

                            Glad you said that Manda, I feel the same way to be honest, but I guess it's easier for people to say "vegetarian" than "someone who doesn't eat meat because they don't agree with the treatment and killing methods of animals".
