Hi everyone! Just read a recipe for crab and lemon spaghetti - mmmm sounds delish! One ingredient was lemon oil - thought I knew about cooking, but never heard of this! Has anyone heard of this/know where I can get it/recipe for making it yourself? thanx dexterdog

Hi, I'm just guessing, so probably not much help, but... could you make some lemon oil by steeping Lemon balm leaves in olive oil?? THey have a really strong lemony scent and flavour and I think that is how other herb oils are made. I don't know if it would work or how long it would take to make. Maybe someone else will have a solution?

You could probably make a hot infused oil by heating lemon peel in a suitable vegetable oil - will just go and find book ..........
Ah, yes ... have recipe for cold infused oil using 3 lemons to 1 cup (250mls) olive oil. Roughly chop fruit in a food processor or with a chef's knife. Use short pulses - do not puree. Transfer fruit to the work bowl of electric mixer and add oil. Mix on low speed for 10 mins and let stand for 2 hours.
Rinse 4 layers of cheesecloth in cold water and squeeze dry, Put mix in cheesecloth and squeeze to extract oil over finemesh strainer over bowl. Let stand again to allow clear oil to float to surface, Poor off into a sterilised glass jar or bottle. Discard juice. cover oil, refrigerate and use within 1 week.
I use a hot infused method for making a maderira cake which is I think peel of 1-2 lemons to 2 cups of oil heated gently in a pan until peel starts to brown. Very subtle.Bright Blessings
