Your best carrot cake recipe

Not made a carrot cake for a few years and can't find my old tried and tested recipe .

I've found a few possibilites on the internet but would rather get your favourite carrot cake recipe - must be moist and squishy but not nuts, pineapple or coconut. Not fussy am I?

I have an old BeRo book, the gingerbread is beautiful, I always put lemon icing on the top, lovely.
