  • Mince recipie plz

    Hi Gang!
    Need some help again, any beef mince recipies... Don't like lasange and don't like cottage pie or mince and tatties, lol sick of Bolonase and burgers...

      Chilli, curried meatballs, or one of my Mum's favourites "TopsyTurvey pie"
      stirfry the mince with a finely chopped onion and season with salt, pepper and whatever herbs/spices you like, You need it to be a dryish mix for the next stage.
      Put a thinish layer of the part-cooked mince in the bottom of a pie-plate (use about a third of the mix). Slice a hardboiled egg so that the slices will make a layer on top of the meat. Add another layer of meat, then use a tomato to make a layer like the egg. Put the rest of the meat over, then cover with a pastry lid. Cook on gas 7 for 20 mins, then turn down to 4. The size we used to share for family supper took another 40 mins, but if the dish is deep it may take a bit longer.
      To serve, cover the pie-dish with a plate, and turn upside down (topsy turvey) remove the dish, and cut the pie into portions. Serve with boiled potatoes (or mash if you prefer).
      If you use a suet pastry, it soaks up any meatjuices nicely.
      Flowers come in too many colours to see the world in black-and-white.

        i have loads of spuds and onions etc, doing some batch cooking to get loads of frozen meals for one, but i was kinda wondering how long before i got sick of shepherds pie and lasagne

        i was thinking of variations of the basics - like have one normal shepherds pie with plain mash and another using cheesey mash
        i normally make curries with chicken or cubed beef, but there are curries we can make with minced beef ....
        i MUST get the cookbooks out for some more ideas ....

              Current favourite - Mexican Cottage Pie. Make a chilli, top with nachos, grated cheese - flash under the grill.
              Life is too short for drama & petty things!
              So laugh insanely, love truly and forgive quickly!

                I'm waiting for pumpkins to do mince & pumpkin.Cook mince as you would for a bol & just add cubed pumpkin at the start of cooking time~goes all creamy!& if yer sick of spag bol have it with rice!

                  This is a favourite in our house.

                  Make up a chilli mix to your own taste and heat! Also have some thinnish long-sliced sweet peppers added to the mix.

                  Grease/oil a baking sheet.

                  Place alternate layers, starting with a tortilla wrap then chilli mixture until the final tortilla wrap is on top. Don't overfill the layers or it will spill out and make sure the middle is more generously covered. Forms up a dome. Cover with a generous portion of grated cheese and bake in oven for about 15-20 mins on Gas 6/7 - sorry don't know elec equiv - until cheese is melted.

                  Should get 6 portions out of this - serve with salad or veg of choice - simply enjoy.

                  If you don't like chilli - this works well with savoury or curried mince or you can layer chicken in your fave sauce instead.

                    Hi everyone,

                    My staple recipe for mince using my faithful wok is as follows.

                    Put approximately 1-2tbsp oil (vegetable, sunflower, rapeseed) in wok, put over a low heat. Add 1 chopped onion (size depends on the strength of the onion) and at least 1 clove of garlic. Cook slowly until softened. Stir often. Add 800g of mince (beef, lamb, turkey, pork, chicken).

                    To change it I add herbs and spices. For example, if I'm making a curry, I fry off curry powder (mild for kids, medium to hot for OH and I or individual spices if I've got time) before adding onion, garlic and meat. If making chilli I add the powder (mild for kids, med-hot for OH and I) after o, g and m. Unless I'm following a special recipe, I always add seasalt, freshly ground black pepper, parsley, thyme, sage, rosemary and bay leaves (yes leaves! Some chefs say that it makes food taste medicinal but we love it.) Also, paprika (sweet for kids, hungarian for OH and I or smoked for a different taste) and 1-2tbsp tomato puree. Chillis and curries get a can of chopped toms or skinned and chopped fresh. Both get some chopped chills, especially for OH and I. Curry gets butter and red kidney beans, chilli just gets the red. Also both get chopped mushrooms and peppers. Any homegrown produce can go in. They also get beer, cider or lager if they need extra moisture depending on what we have in. Cook it down to reduce excess moisture. Variations are the chilli mix without the chopped toms in tortilla wraps. Savoury mince without chilli or curry wrapped into filo pastry. The same mix with tomatoes makes the base for a shepherds pie or mince layer for lasagne or just a sauce for pasta.

                    Learnt the basic recipe almost thirty years ago and it's still a work in progress. Take it, adapt it, make it your own.

                        Meatballs with grated parmesan and wholegrain mustard - lovely. Serve with a simple tomato and basil sauce, or with roasted veg then cooked in tomatoes (might need a bit of sugar), then whizz - good for hiding veg from kids. I also do a kids meatball with ketchup and grated mozzerrella - goes down well.

                        Moussaka (though it is supposed to be minced lamb)

                        Meatloaf is good hot or cold- there are many variations, using different veg, or oats/ric/breadcrumbs, different toppings - Try delia's - very nice(Site search from Delia Online)
