I'm making fudge, it's been on the rolling boil for ages but doesn't seem to be thickening any. I've been doing the soft ball test on a saucer but not getting anywhere.

you need to tak it off the heat and beat it until it is thick and glossy. you need to beat for ages. it should be fine then

you make some popcorn or a steamed sponge, or get ice cream, and use it as a sauce..... can you tell i've often given up on runny fudge

I did 3 times the quantity, so it's a pretty big pot. I think we're getting there though, almost soft ball stage now. Woo hoo!Comment
