    hi
i found this one if it is any good to you

    Cook: 20 min Ingredients
    600ml cold water
    1 tsp ground burdock root
    1 tsp ground dandelion root
    2 cm piece Ginger, sliced
    1 whole Star anise, crushed
    1/2 tsp citric acid
    300g granulated sugar
    soda water

Method 1. Place all of the ingredients, except for the sugar and soda water, into a large saucepan and boil for 20 minutes.

    2. Filter the mixture into a serving jug, through a sieve lined with a tea towel or muslin cloth. Whilst the mixture is still hot, stir in the sugar until dissolved. Leave the mixture to cool.

    3. To serve, add 200ml of soda water to every 50ml of syrup in the jug and stir well, then pour over ice in glass tumblers.

    Cook's note
You can keep any extra syrup mixture in the fridge for up to a week, adding fresh soda water for a quick homemade dandelion and burdock soda. For an alcoholic version, replace the soda with tonic water and gin.

How about some elderberry cordial, seeing as this is absolutely the perfect time for picking them.

            Recipe

            Elderberry Cordial
            Elderberries (still on stalks)
            Sugar
            Cloves

Pick the fruit on a dry day and stew with the stalks in a large stainless steel saucepan, with just enough water to cover.

Strain through muslin squeezing to get all the juice.

To each pint of juice add 1 lb of white granulated sugar and 10 cloves.

            Boil for 10 minutes.

Allow to cool and bottle in sterile bottles with good quality plastic screw-on tops making sure you distribute the cloves evenly amongst the bottles (they act as a preservative).

The cordial can be used immediately, and will keep well for a year or two.

Taken with hot water it is renowned as a guard against colds, and a glass a day through winter is a wise precaution..
I'm only here cos I got on the wrong bus.
