is it the same as preserving sugar?

I would have thought so Vicki. Just had a look in the cupboard and mine says Jam Sugar With Added Pectin. Read the label. It should contain pectin.Last edited by Lesley Jay; 19-08-2006, 05:13 PM.[

Re: When are chillies ready? I read somewhere today that when they have become very firm and crackle slightly when felt, even if they are still green, they are ready for picking.
Preserving sugar has big granules but no pectin, so do check labelling.
I made some really delicious chilli and coriander jam yesterday, using a glut of tomatoes. I'll post the recipe later. Putting some into pasta sauce tonight...

Thanks. Will go on a search for jam sugar tomorrw then - I wanted to get some chilli jelly made this weekend. Mind you, chilli and coriander jam sounds delish - I'll have to keep some chillies back to try that I think!
