Does anyone have a good easy recipe?

I just had it in my sandwiches and I'd forgotten how much I like it - thought to myself it'd make sense to make my own.

I used to have a hotel, and the favourite baguette filling was always Coronation Chicken. If I was going for a nice buffet version, I would go with Hans Mum's recipe but if it's just for a quick sarnie filler try:

      Mayonnaise
      Apricot Jam or Mango Chutney
      Chopped Pineapple or Sultanas
      Chopped parsley
Finely sliced onion (red tastes good with this)
Turmeric/chilli powder/cumi/coriander or some curry powder or paste
      Chopped, cubed or shredded chicken

Mix it all up and fill yer sarnie!

I use Mayo, mango chutney normally hotter stuff so I don't need to add powders or chillis, sliced roasted almonds and a few sultanas.

My cheats recipe goes down well with OH and he's not easy to feed

Cool, I was wondering how I'd use up, within 2 weeks, the 1 lb jar of mango chutney I made.
