  • Courgette cake recipe help please...

    Last week I made the wonderful courgette cake from the Foodie Site - the one with cream cheese & orange icing.
    Anyway - I made it straight from the website. Now my friend wants the recipe and the site appears to have gone down and I can't get it

    I don't suppose any of the grapes have it written down anywhere ??

    No but I do have a courgette recipe written in my recipe book if you are unsuccessful.

        Courgette cake recipe

        Courgette Cake

        Portion: 1 10 inch or 2 8 inch tins
        Preparation: 15-20 mins
        Cooking: 1 hour

        Ingredients

        Cake

        250g butter
        450g caster or brown sugar
        4 eggs
        350g SR flour
        Juice and zest of an orange
        1 tsp cinnamon
        ½ tsp mixed spice
        350g grated courgette
        50g chopped walnuts
        80g sultanas

        Topping

        125g cream cheese
        50g butter
        300g icing sugar
        Juice and zest of ¼ orange

        Method

        Cake

        1. Grease and line tin(s) with baking paper.
        2. Preheat oven to 180ºC.
        3. Place butter and sugar in bowl and beat till creamy.
        4. Add eggs one at a time while mixing until eggs are well incorporated.
        5. Sieve the flour with the cinnamon and mixed spice.
        6. Fold in 1/3 of the flour, followed by ½ of the orange juice and zest. Repeat this using the remaining flour and orange so that all the ingredients are well combined.
        7. Stir in the courgette, walnuts and sultanas and incorporate well.
        8. Pour the mixture into the prepared tin(s) and place on the centre shelf of a preheated oven.
        9. Leave the cake to cook for an hour in 1 tin or 30 to 40 mins in 2 until cake is firm to the touch and a skewer inserted into the centre comes out clean.
        10. Turn out onto a rack and allow to cool.

        Topping

        1. Beat the cream cheese and butter together until creamy.
        2. Gradually beat in the icing sugar and orange juice and zest until you have a smooth creamy icing.
        3. Spread over the cooled cake.
        4. For 2 cakes, use ½ the topping to sandwich them together then top with the remainder.

          Here is my courgette recipe also.
          16oz grated courgette
          5oz raisons
          21/2oz flour
          1oz rice bran
          2oz apple fibre
          1tsp bic soda
          1/2tsp allspice
          3/4pt semi skimmed milk
          5 egg whites
          7oz sugar

          1. Mix flour, rice bran ,apple fibre, bic soda, allspice mix together .

          2. Then stir in courgettes and raisons.

          3. Blend milk into dry ingred & mix well .

          4. Beat egg whites untill stiff.
          5.Add sugar to egg whites then fold in remainder .
          Bake for one hr in oven temp 350 f.
