Slightly off topic - but I wondered if anyone knows how long beetroot will keep in the fridge. Mine are still languishing in the fridge after being harvested months ago. They seem pretty firm but I don't want to try and make something with them if they are going to be past it.
I'm a beetroot virgin so I wouldn't really know how they are meant to taste etc.

maybe time for a wee word about how to store beetroot so that it stays useable.
It is likely to be damaged by frost so it does need to be taken off the ground. I remove anyexcess soil, then twist off the leaves 2"-3" above the root. I then dig a hole about a spades depth. Line it with fleece. Pop in the roots. cover with fleece. Then cover with soil to a depth above the ground of about 9". The hole can be lined with straw and the roots can be covered with straw instead of the fleece. Straw will provide additional insulation but 9" is enoughto keep frost free up here.
Alternatively store in boxes of sand in a frost free place.
We had never tasted fresh beetroot until just recently, only ever pickled in a jar. It is now probably my favorite veg, I plan on growing loads of it this year.
I've only eaten it roasted and made a roasted beetroot and red pepper soup. absolutely delish. I want to try all the recipes mentioned now

They're not cooked (going into freezer) but these are Beetroot Keftedes, made the other day. Like meatballs but made with grated beets, soft and hard cheese, flour, herbs, etc.
