If you also have surplus French beans, I just found a very simple and easy recipe, for using tiny beets and French beans, cook, mix together, add olive oil, lots black pepper and seasoning.
I tried this beef, beetroot and red wine casserole tonight, thanks to our first batch of beetroot being ready to harvest. It's not difficult to make, and really tender after 2.5 hours in a low oven - definitely one I will make again
Peel, cut into chunky chips, coat with cooking oil and a little seasoning, roast in the oven at 180 - 200c for about 40 mins until crispy on the outside and soft in the middle. Yum.
