My friend picked up some enormous mangoes for me from Lidl today for 59p each. I would like to make some Mango Chutney, anyone recommend a tasty recipe for me to try?

I think Geeta's mango chutney is LOVELY, so I copied the ingredients from the back of the jar when I had a couple of mangoes. It's almost word for word the same as a recipe in an ancient curry book I've got (and use constantly).

This recipe is from the Sarsons Pickle book:
900g (2lb) Ripe mango flesh, peeled, stoned and sliced.
300ml (1/2pt) Pickling vinegar
450g (1lb) Sugar
25g (1oz) Fresh root ginger, grated
2 cloves
5ml (1tsp) salt
Method
1. Place the mango in a large saucepan along with the vinegar and sugar.
2. Bring to the boil and simmer until the fruit is just soft, stirring occasionally.
3. Add the remaining ingredients and simmer for a further 20 minutes. The chutney will thicken slightly on cooling.
4. Spoon into sterilised jars, seal, label and store for 1 week before use.

Oh, are mangoes cheap right now? *plans market trip*
I made a jar of mango chutney a few weeks back using the directions on the following video:

then noticing that the chutney tasted a little dull, I sort of combined some of Delia's ingredients on the next link into the pot, to make what turned out to be a great mango chutney. I had it on a Indian take-away last night and had it today as an ingredient in coronation chicken on homemade olive ciabatta for tea. yum!
