Someone posted a thread about comfort food on another board, here's my favourite recipe, its tasty and very moreish.
Lentils with noodles and chilli tomato sauce
2 tbsp vegetable oil
1 large onion, diced
2 cloves garlic, crushed
1/2 tsp ground cumin
1/2 tsp ground coriander
450g cooked red lentils, drained
225g noodles or spaghetti, cooked and drained
Grated cheese (for topping)
Tomato sauce
25g vegetable oil
1 small onion, finely diced
2 cloves garlic, crushed
1 tin chopped tomatoes
1 tsp oregano
1 tsp fresh parsley
1 chilli, finely chopped (or more to taste!!!)
salt & pepper
For the tomato sauce:
Put the oil in a heavy pan and fry the onions over a low heat until soft. Add the garlic and chopped fresh chilli and fry for a few minutes. Add the chopped tomatoes, stir and simmer for 10 minutes. Add the herbs and season to taste with salt and pepper. Simmer for a further 10 minutes and allow to cool.
For the noodles and lentils:
Put the oil in a heavy pan and add the onion and garlic. Saute until golden. Add the cumin and coriander and toss in the lentils. Stir well and heat through. Season to taste with salt and black pepper. Add the freshly cooked noodles and gently mix. Transfer the noodles and lentils to a baking dish and pour the tomato sauce over them. Sprinkle grated cheese over the top and bake in a pre-heated oven at 190C/375F/Gas Mark5 for 30 minutes.
Mmmmmmmmmm.........
The tomato sauce is to your own recipe really, but the spicy sauce topping with the mild lentil base is just very yummy! Great as leftovers too!
