My friend is entering a few of the catergories in a local show and needs a really good recipe for oatcakes. Anyone got a tried an tested one that they could post?

Really good oatcake recipe required

Here's one I've used
Scottish Oatcakes
Makes about a dozen
10 oz medoim oatmeal
half level teaspoon salt
3 tablespoons melted butter or bacon fat
4 fl oz (you might need less) hot water.
Heat oven to 350F - gas mark 4
Combine oatmea and salt, then add fat and enough water to make a stiff dough.
Roll out on a floured board to about a quarter of an inch thick. You need to do this quite quickly. Cut oatcakes with a round cutter and transfer with a spatula to a greased baking sheet. Bake for about 10 minutes by which time the edges should have just started to go brown and turn up slightly. Cook completely on a cooking rack before storing.

I've lost the recipe but I'm sure it would work with Flummery's.Last year I made some adding some fennel seeds~tasted really good.A few pinches or so sounds like a good estimation!the fates lead him who will;him who won't they drag.
