  • Any eggless cake or teabread recipes?

    Has anyone a recipe for a fruit loaf/teabread or cake made without eggs?

    I really fancy a piece of something sweet with a cuppa and we've no eggs. Normally we have a scone but I fancied something different...

    Found this one, and giving it a go:

    Date and Walnut Teabread

    Ingredients.

    175 grams dates, roughly chopped

    125 grams raisins

    150 ml hot, strong but not stewed tea

    125 grams softened butter

    50 grams chopped walnuts

    125 grams dark muscavado sugar

    225 grams of plain flour

    150 ml milk

    1 teaspoon (5mls) baking powder

    1 teaspoon (5mls) bicarbonate of soda

    1 teaspoon (5mls) of ground cinamon

    1/2 teaspoon (2.5mls) ground nutmeg

    Soak the dates and raisins in the tea for at least one hour but up to 8.

    Place all the ingredients in a large bowl and beat together, an electric mixer is easiest.

    When thoroughly mixed pour into a lined 2lb loaf tin and bake for about 1 and 1/2 hours at gas mark 4 or 180c/350 f.

    Check after about an hour and cover with foil if browning.

    It is done when a skewer stuck in the middle comes out clean. Leave to go completely cold in tin.

    Can be eaten at once but is even better if wrapped in foil and stored in a tin for up to one week. It is surprisingly tasty without the spices but nice with them too. This works with wholemeal flour but will give a dense loaf, our preference is half and half.

      If you're still in need I have a recipe somewhere for choc sponge.Before I go digging it out though,will let you know I only made it the once!!(& all those that tried it couldn't open their mouths to let me know what they thought of it!!!)

            Im such a narse, I read your thread title as eccles cakes or tea bread.

              Whilst looking for something else I came across this piece of advice:

              Substitutions:
              For eggs in cake recipes - Add an extra 1/2 teaspoon baking powder and about 2 tablespoons extra liquid to replace one egg
              To see a world in a grain of sand
              And a heaven in a wild flower

                Just want to report that I've got the Spiced Apple Cake (from the Vegan Society web site - Ta Two-Sheds!) in the oven and it smells drop dead scrummy!

                  My Mum used to make a pudding called 'Six Cup Pud' I think it was a wartime recipe, developed to be used when there were no eggs available

                  One cup each of flour; breadcrumbs; sugar; suet; milk; sultanas or raisins or dried mixed fruit. Also a spoonful of syrup or molasses or treacle, or a few drops of vanilla essence

                  Mix it all up, place in a pudding basin or cloth, and boil or steam for a couple of hours
