Mad keen angler of over half a century of experience, mostly failing to catch much.
Personal preference, boneless fish, yes they do exist!you need a member of the dogfish(small shark) family,or a ray, skate, thornback. These all have cartilage and no bone at all, before trade description act it was sold in chip shops/fishmongers as rock salmon or roker.
With regards to trout I always..........................chuck them back as they are tastless,or use dead trout as bait for a small Pike, now there is a tasty fish, bony but tasty.Try a Grayling if you want to eat a fish out of river caught by yourself.

The best tasting fish I ever caught, well my first ever actually, was on holiday just north of fort william where there was a river going through the back garden of the cottage we were staying in. My OH had bought me a small extendable rod - said something like if I caught anything I would panic and lose it!.......a few minutes later, yep! got something on the end of the line - and yes, I did panic! handed rod over to OH and he landed a 4lb wild salmon! I've been hooked ever since! The taste of wild salmon v farmed salmon is like eating fresh pineapple v tinned - no comparison! dexterdogBernie aka DDL
