  • How many dried beans make a big can of beans?

I'm doing a recipe which calls for a 14oz can of haricot beans, but I'm going to use beans wot I have grown and dried myself.

Anyone know what approx weight of dried beans I should use?

No idea doll but, as Flum says - couldn't you just add a slack handful

As they double in size, I usually measure out half a mug full.

Right, thank you, that makes sense. I was just going to guess and bung in the slack handful as Scarey suggested, but thought I should be a little more scientific if poss.

Lamb and pumpkin stew. Equal amounts of pumpkin and lamb with a leek (or seriously overgrown spring onion in my case) and some garlic, all browned in a pan, then add some flour and allspice, and lamb stock to cover & simmer for 3/4 hour. Add in drained can of beans & heat through.

I've done the first bit, and will soak and cook the beans tomorrow to add when reheating. Stew's always better second time round, I find.

Left over pumpkin to be made into soup with a stack of jerusalem artichokes which I dug up this morning. Just must get the enthusiasm up to peel the JA's....

I don't have to guess at all now - thank you, two sheds!

Slack handfuls ARE scientific! Every time I use a slack handful, it's the same amount! (ish)

I'd have gone for about 4oz. Beans absorb about twice their weight in liquid (a bit more usually) and then there is the water you would drain off the tin. Of course being one of those who just about never weighs anything, I more often do 'volume' measure. Find a measuring jug with fl oz, and measure to 6/7oz mark..... (200ml, for those who like metric)
Flowers come in too many colours to see the world in black-and-white.
