    Here you are EarthBabe:

    Recipe for heated infused chilli oil. Like i said i had to dilute it four times for use as very hot but depends on the chillis you use and your taste.

    1) Cook over a very low heat for 10mins in a frying pan 250ml groundnut oil and 6 tbsp dried red chillis( can be substituted for others ) Do not overheat. Leave to cool.
    2) When cool add 2-3tsp ground cayenne and 1-2tbsp sesame oil. Leave to stand for 12hrs.
    3) Strain into a sterilised bottle. Add a few whole chillis for decorative effect. Keep in a cool dark place.

    I made chilli oil last year from my own recipe (untried and tested!) I simply dried my chillis (in the airing cupboard) then added them to bottles of olive oil. I'm just finishing the last of the oile now - before hopefully making more from the new harvest. However, Mother in law gave us some she'd made, and her chillis were far less wrinkled - i.e. not dried. Not sure what she did to hers, but her oil was VERY potent, whereas mine was moderately so.

      drying chillies reduces the amount of potent oil, like you say jerseybean, its down to individual taste, i like it HOTT!!!!!!! but for family and friends i usually dry them, also it depends on the chilli your using.

        are the chillies red or can they be green ones

          I pan to make my own this week, I have some good (but cheap) olive oil and will use fresh red chillis. I plan to gently saute before infusing for a few weeks. Anyone care to say how many chillis per litre of oil?

            anyone know how long this will keep for thought i'd make some for my brother-in-law he likes it hot hot hot

              The chilli oil i made from the posted recipe lasted at least a year.
