Do you have a recipe please Melanie for the elderflower pancakes ?
They sound yummy!
The last few years I've been freestyling it, but the batter can end up too heavy if not careful. So this time I shall be following a recipe:
Per person:
6 elderflower clusters, stalks on (gently washed & left to dry on a kitchen towel)
1 egg (separated)
50 g plain flour
70 ml milk
Pinch of salt
Tsp sugar
Optionally some zest of lemon.
mix the dry ingredients with egg yolk(s) and milk. Beat the egg whites until almost stiff, then fold in.
Dip the elderflowers into the batter, fry in oil or clarified butter.
As soon as the batter has set a bit, use scissors to cut off as much of the green stalks as possible. Flip pancakes, cook until golden on both sides.
Serve with sugar&cinnamon, and apple compote or similar.

Lunch: omelette and salad.
Supper: I made bread eventually, so a sandwich of some sort. Possibly peanut butter, though I much prefer that on toast and it seems a shame to toast a loaf that's not long been out the oven.
Probably just me for lunch, so courgetti and a tomato and basil (home-grown) sauce.
Supper: aubergine parmigiana (half a tub of mató cheese to use up, what a great excuse).
Need something sweet to take on a visit to neighbours down the valley. Probably biscuits of some variety.
