When I was doing Atkins diet, I used steamed shredded cabbage instead of rice with all sorts of dishes (mostly curries and chillies). It works quite well.

Shred the cabbage finely; braise in a heavy, covered pot with butter, rosemary, salt & pepper, the minimum amount of water or wine; and a small amount of crushed garlic if you wish; takes about 15 mins. Take lid off and continue till all water has evaporated, and it starts to fry in the butter. Stop before it browns too much

            Hi
I love it lightly steamed, then mix in a strong cheese sauce, sprinkle on breadcrumbs and brown in the oven. Really good.

              Cabbage (or Kale) Colcannon

              Colcannon

              serves 6

              1lb kale/cabbage, chopped & cooked
              4.5 lb potato, mashed
              2 leeks, sliced
              12 oz milk
              6 oz butter

Simmer leeks in milk until soft. Mix everything together and serve

(top with breadcrumbs & grated cheese then grill, if you're feeling indulgent)
