Leftover samosas with shredded red cabbage and carrots.
Process my summer leeks to get the samosa filling partway ready for use. Anyone else had Meera Sodha's leek and pea samosas? She uses filo pastry but I had some Spanish empanada wrappers that I used. Quite a bit easier than the filo palaver. Regardless of the pastry, the filling is delicious.
