I don't usually do this, but I had some cooked chicken and a parsnip for tea and wanted to try something different. So I looked up recipes and couldn't find anything suitable, and decided to adapt a recipe for chicken curry.
Original ingredients:
chicken breast
bell pepper
tin tomatoes
curry powder
ground almonds
garlic
lemon juice
coriander leaf
My ingredients
cooked chicken thigh
onions (instead of peppers)
cooked parsnip (instead of tomatoes)
chicken stock (to make up for the absence of tomato juice)
curry powder
ground almonds
garlic powder
ground coriander and cumin
(I like extremely mild curry - you could add other spices to pep it up a bit)
The basic instructions were to rub spices into the chicken, cook it in a pan then add everything else and simmer until soft. I adapted this to cook the onion until soft, add everything else except the chicken and stock, cook briefly then add the stock and blend until smooth, adding a bit of the parsnip water as the mixture was rather thick. I then had a nice, somewhat sweet tasting mild curry sauce to pour over my chicken and reheat.
There were no quantities in the original recipe, so I just flung in what I thought would be about right. The amount of parsnip that would normally have done me 2 meals has made enough sauce to freeze half for later.

Sounds lovely Pen.
I’ve frozen a turkey and mango curry for a friend who is coming to stay. She really can’t cope with any heat so I didn’t bother putting any curry in it at all!….the rest of us can mix in something hot at the time. Not ideal for us , but it actually tastes lovely!

Sounds good, Penellype.
Tell you what I haven't made for ages: curried parsnip and oat soup. Sounds a bit grim and the colour isn't fantastic, but it tastes lovely. And so creamy. Lots of recipes online. I used to do one like this, just no cream as really not necessary:
