I couldn't find any really nice fresh fruit so I ended up making us individual orange jellies with tinned mandarins in them. Obviously with fresh cream. They actually were so refreshing and melted in the mouth.
I also ended up making a spicy tomato sauce to go with the prawns and we had rice with it, so no salad or risotto.

Tonight salmon. I think I might steam it to avoid oven heat in the kitchen. My favourite way is to slice a lemon into slices about ¼ inch thick, spread them in the base of a shallow pan, lay the salmon steaks on top, season, and then just put enough water in to come to the top of the lemon slices. Bring to the boil and then simmer covered for about ten minutes until cooked. We'll have new potatoes with broccoli and carrots with it, maybe some parsley sauce.
