  • Unripe cape gooseberries

I have got quite a lot of unripe cape gooseberry fruit left over from an experimental crop from saved seed from shop bought fruit.
They were planted late and the seeds took a long time to germinate.
So apart from putting them through a green tomato recipe what can I do with them?

If they're starting to change colour even a little then they will usually ripen successfully off the plant (although they won't be quite as sweet).

Depending on how the green ones taste, they may also be good for jam. I made tomatillo jam last year and it came out pretty well, and cape gooseberries are very closely related. Cape gooseberry jam (ripe ones) is also apparently pretty popular in Australia.
Cape gooseberries have a lot of pectin in, so will set well without having to add any.

The vines have not yet been cut down by the frost so the fruits are staying on for now.
