  • Freezing corn on the cob?

    Any advice on this please?
    Previously when I grew it myself I used to freeze the cobs with their outer ‘leaves’
    This time would involve freezing shop bought ones with no leaves.

    Are they ok just placed in a freezer bag and frozen? Maybe with a bit of grease proof paper around them first?
    Do they really need blanching????I’d prefer to keep them on their cob so they can be bbq’d mid winter….

    What do other grapes do/ advise please?

    This year is the first time I have frozen sweetcorn, and I blanched mine, but I don't know for certain whether they actually need it.
    I would have thought they would, though, as the sugars in sweetcorn very easily turn to starch, and blanching them would prevent that (as the transformation is an enzymatic process, and blanching destroys those enzymes).

      I have frozen them every way possible over the years. On the cob I found there was really no difference between blanching or not blanching (ok, but a bit rubbery) but the year before last I had lots so decided to freeze lots of corn off the cob unblanched in bags. For me this is the only way I will use now. They were perfect just thrown into everything and no rubberiness. Risotto, salad, stir fry or just heated with a knob of butter. And they take a lot less space.
