    I’m hoping to grow- and dry - more beans this year and came across this site….

    I’ve always been at a bit of a loss of what to do with jars of dried beans, but these look interesting recipes. I must remember to soak them long enough in advance!

            Just remember that a lot of dried beans, including all runner beans and several types of french bean, need boiling on a full boil for at least 10 minutes to destroy all of the toxins in them. You can't just toss them straight into a stew and just simmer it until they are soft.
            They're not deadly or anything, but if you don't cook them properly you'll have vomiting and diarrhoea for 24-48 hours afterwards.

            Personally, I find it easier just to cook them fully before hand and then use them in recipes that call for tinned beans. If you have a pressure cooker, pre-soaked beans will fully cook in 10 minutes on high pressure (they take 40-50 in an open pan). 120g dry weight will equal 240g once cooked, which is the drained weight of a standard tin of beans.

            I recommend growing runner beans over french beans for drying. They crop much more heavily, at least in our cool climate (not so sure about where you are in France), and I think they taste better. Most varieties of french beans for drying (cannellini, haricot, kidney bean, etc.) taste rather bland, whereas dried runner beans taste rather sweet and nutty.

                Thanks for starting this thread, Nicos. I love beans in general but not a great fan of kidney beans. I think it's a texture thing. This is a good recipe, except I add alliums and other bits and bobs to pad it out:

                  My favourite red or black bean recipe is Maharagwe ya nazi (beans with coconut) which I had almost every day for lunch when I was living in Kenya for a while. E.g https://fauziaskitchenfun.com/recipe...ragwe-ya-nazi/

                        We eat a lot of lentils, but this is a perennial favourite with lots of added extra veg like carrots and squash to make it a one-pressure-cooker meal.
