  • Any recipe for beetroot?

    Everyspring I grow some beetroots for their young leaves, but by the end of year, I always end up with a lot of bootroots. Never know what to do with them except boiling them.

    Does anyone has some easy recipes for them? thx.

      Brilliant ... that's a much better name for them (as in, tough as old boots) That ones gonna stick

      I chop mine into one inch cubes and roast them up with potatoes, parsnips etc. Sprinkly some paprika on, lovely.

        Agree with TS - roasted they are great.

        If you've got a glut, why not try pickling them - either whole or sliced?

          boil your bootroot [see, it's sticking already].

          douse in cold water until cold enough to handle.

          slide skin off and chop roughly. Add mayo and a sprinkling of cumin. mix. eat. preferably with salad. this saw us through most of our summer lunches!

          you can add finely sliced onions if feeling particularly naughty.

            This is a simple pickling recipe in sweet vinegar. I only used 1/2 cup of sugar as it is too sweet for my taste using a whole cup.

                You can make beetroot soup.They are also great as addition to meat-cooked,grated and spiced with lemon juice

                  I really like this one out of the Abel and Cole cookbook:

                  Keith’s lovely beetroot penne

                  Serves 4.

                  About 700g (1lb 6oz) beetroot
                  A few good glugs of olive oil
                  400g (14oz) penne
                  3 garlic cloves, peeled and minced
                  Juice of ½ lemon
                  ½ mug of single cream To garnish:
                  Plenty of freshly grated Parmesan cheese
                  Toasted walnuts, finely chopped
                  Chopped fresh parsley or basil (optional)
                  Preheat the oven to 190C. Place the whole beetroot in an oiled baking pan, rub with olive oil and cover tightly with foil. Roast the beetroot until fork tender. The cooking time will vary according to the size of the beetroot, but will probably be around 1-1 ½ hours.

                  When the beetroot is cooked through, remove it from the oven and set aside to cool. Meanwhile, start boiling a pan of water for the pasta and preparing the other ingredients. When the water has boiled, add the pasta and cook according to the packet instructions.

                  Now peel the beetroot (the skin should slip off easily), remove any remaining stems or hard bits, and cut into bite-sized chunks. Saute the garlic in a pan with a few glugs of olive oil for a couple of minutes over a medium heat. Then add the beetroot and sauté for a further few minutes to ensure it’s hot. Stir in the lemon juice and mix well. Lower the heat and gradually add the cream, cooking for about 2-3 minutes until just hot.

                  Spoon the creamy beetroot mixture over the drained pasta and top with lots of Parmesan, toasted walnuts and fresh herbs, if using.

                  If you have leftovers, try tossing them with a block of crumbled feta or goat’s cheese and some olive oil and bake in a greased baking pan at medium heat for about 20 minutes, until heated throughout and slightly crunchy on top. You’ll end up with a rather colourful and sophisticated version of macaroni and cheese!

                  Very pink but surprisingly nice.

                      the best thing for beetroot is put it on the compost heap. i hate the stuff!

                        They make a lovely wine (even OH loves it and he hates beetroot)

                        Beetroot Raita
                        1 small uncooked BR peeled and finely diced
                        200ml nat yog
                        salt to taste
                        1/2 tsp freshly ground black pepper
                        1tsp veg oil
                        1 scant tsp brown mustard seeds
                        1 heaped tsp sesame seeds
                        10 large curry leaves


                        Mix together the beetroot, yoghurt salt&pepper.
                        Heat the oil in a saucepan,add the mustard seeds and as they pop add the sesame seeds and curry leaves. Cook until the seeds colour and add to the raita. Wonderful!

                        (Anjum Anand ) It can be made with plain cooked beetroot.

                          my kids won't eat bootroot, i love it though so i am going to grow it this year.

                          anything i don't eat is going for wine cos i have seen it highly recommended, and not just on here
