Cooking Tonight #5

  • Something we haven't had for ages. Smoked mackerel, new potatoes, corn on the cob, a salad (maybe apple, feta, celery, and walnut), and possibly a "few" beer battered onion rings.

    The next time I go into the kitchen I'll put some beer in the fridge ready for the batter and also make some mayonnaise.

    • Last night was fish fingers (the giant battered ones have lovely white, meaty fish in them) with chips and an oven bottom.
      Tonight is a Chinese throw out, Chow Mein for me I think. Himself will probably have Foo Yung as it resembles an omelette

        • Tonight soup I think. Potato, onion and leek. We'll have it with bread and butter and parmesan.

          I think I'll ask Mr GF if he fancies pancakes again for dessert, with a sprinkle of sugar and fresh orange juice

              • (enormous) Pork chops with baby potatoes, sprouts (for me) broad beans, french beans and gravy. Only two of us because one of the offspring has a cold and doesn't feel up to driving, so two of the chops went back in the freezer.
                Location:- Rugby, Warwckshire on Limy clay (within sight of the Cement factory)

                      My fish pie recipe is very basic. I usually make it at the end of the week when I have no fresh meat/fish left. For two of us, I take a couple of cheap supermarket frozen cod or haddock fillets out of the freezer and let them start to defrost. I then cut them into pieces and cover with milk in a shallow pan. I slowly warm the milk. By the time the milk has nearly reached boiling point they are usually cooked. I lift the fish pieces out of the milk with a slotted spoon and put in a pie dish. I then add salt and pepper to the remaining milk and thicken it with cornflour. I then add a knob of butter and plenty parsley. I pour this over the fish in the pie dish. I then let this set while I boil and mash potatoes, with plenty of butter and milk, and maybe capers. I spread the mashed potatoes over the top. At this point I either freeze for later use, or add grated cheese and sliced
                      tomatoes and stick in the oven for half an hour at gas 5 until the top is browned and the base is starting to bubble up through the potato.
