  • Himself requested sandwiches - again last night, so I joined him, but toasted mine with some cheese in. "I might have that next time, it smells nice" says Himself.
Think we'll have something with chips and peas tonight, then raspberry and coconut tart.

    • Last night's "corned beef crispbakes" were lovely. I shall be buying more, which is more than I can say for the revolting frozen corn on the cob. I also seem to have overcome Mr GF's aversion to any greenery in his salad. The answer, for him, is definitely to pre-dress it with lots of mayonnaise.

Tonight I think we'll have haggis, mashed potatoes, cauliflower cheese, carrots, french beans, and a creamy gravy.

Yoghurt or blue cheese and crackers.

I'm already half planning a mandarin and chocolate trifle for later in the week with chocolate mini rolls in the base.

      • Flo, the raspberry and coconut tart sounds yummy. Do you have a recipe?

        • I’m thinking that is something similar to a Manchester tart Flo…or a coconut type Bakewell tart?

Oh gosh…you’ve got me salivating now at the thought of both!

          • The filling is 125 g each of dessicated coconut, butter and castor sugar whisked with 2 eggs and a tablespoon of SR flour. I sometimes add ground almonds.

                • I use a 7" square cake tin lined with short crust and slathered in raspberry jam. It would easily do 12 individual tarts. Not sure about timing greenishfing but until the topping is golden and firm. Sprinkle extra coconut on before cooking.

                  • Bangers and mash. My turn to try out the induction hob that I installed yesterday.

                    • We ended up with cassoulet and a nice bottle of wine tonight. Extravagant but somehow it felt necessary after a bit of a rubbish day. Anyway, a fresh start tomorrow.
