  • I didn't get any fresh fish, so I'm going back to my original idea of roast chicken.

    I was going to spatchcock it, coat it in a marinade of yoghurt and spices, and have it with corn on the cob, couscous, and roast veg. Due to the wintry blast here at the minute, I've decided to go down a more traditional route. I'll stuff it with lemon and onion and roast it with oil, lemon, and tarragon. We'll have it with potato dauphinois, cauliflower cheese, carrots, french beans, and gravy.

    I'm going to make a raspberry and chocolate trifle now. I don't like jelly in trifle, so no problem with it setting. The raspberries can go in frozen, which will cool the custard rapidly. I'm just deciding what kind of booze to add to it.

    • Well, we had wild asparagus risotto for lunch. Feels a bit early, but I managed to pick a fair-sized bunch. A bit woody, as usual, but the tips were very nice. So supper tonight is leftover tortilla and salad.

      Was thinking of doing some baking this afternoon, but a bit of eyelid inspection seems more on the cards.

      • GF you’ve mentioned Corned beef crispbakes so we decided to give them a go.
        They were very tasty along with beans and a few chips.
        We’ll be buying them again.

          • CG…do you make your own corned beef crispbakes?
            If so, do you have a recipe please?
            They sound like something which might be good to freeze?

            • Nicos, I think you mean me regarding the crispbakes. I only discovered them when I started doing my shopping online, probably because I tend to browse more. The are similar to a fishcake, but they are just so tasty.

              In fact I have just discovered that they do cheese and onion ones too. They've been added to next week's list.

              • Tonight a very easy meal. Leftover roast chicken, salad of some kind, either garlic bread or New potatoes and corn on the cob.

                More of last nights trifle too, which is very moreish. The sponge layer, (chopped up chocolate mini rolls), got a good dousing of whisky as it just seemed to be a natural companion to raspberries.

                  Mr Snoop has been dropping hints that it's Pi Day (in the States, at least), but not sure I can accommodate that. Not easily, anyway.

                      Ha!…I love celebrating anything with food. Any excuse…but I’d forgotten that ( focussing on St Patrick’s Day at the moment)
                      Darn…that’s not going to work with curry….but I guess I could make a fruit pi for pudding.

                      • Nothing inspired me yesterday so it was fish fingers. Today will be Lasagne with salad.
