  • What can I do with fish?

    Just to be different for once we ( hubs and me ) have decided to have fish for our xmas dinner. We both think its a good idea but have no real idea's about what to make with it.

    I'm good with fish pie and fish pattie burger type things but they don't seem special enough for xmas so I was just wondering if any of you bright sparks out there could give me some idea's.

    It doesn't want to be too expensive to make or to take half a week to prepare ( tho if its really nice I would be willing to give it a go )

    We were talking about maybe a smoked whitefish, but any fish idea's would be great.

    well salmon is always on the menu at xmas for us, usually day after boxing day when we are all meated out.

    salmon steaks, wrapped in foil, with spring onions, butter, lime and coriander, then baked, they dont take long, you can do the same with a whole fish though.

    dill or fennel goes nice with fish too.

        You might like tp try this Izi. Use any kind of fish you like, or a mixtue and some prawns if you like.
        Poach the fish and flake it into nice chunks.
        Hard boil a couple of eggs if you like.
        Make a white sauce or a cheese sauce if you prefer.
        Put the fish in a bowl and mix gently with the sauce. Leave to cool.
        Roll out some puff pastry .
        Put the fish mixture in the middle of the pastry and draw the ends up to meet each other and seal the edges (it should look like a big sausage roll)
        Brush with whatever you like and bake in the oven according to instructions for the pastry.
        Very simple. Very nice. And it can all be made ahead.

          Smokies are nice, smoked white fish boiled, then mix them with a beachamel sauce. Put it into small grill proof dishes and grill until the edges are a little crispy. Yummmmyyy.

          Probably not a main course, but good as a starter.

          I am a big fan of salmon though, and salmon en croute is just delish

            Thanks for all the great idea's!! That website has a bewildering amount of recipes, great link.
            I will deffo try the fish and prawns in pastry it sounds really yummy.

            The smokies sound great too.

            Hmmmm, I think the salmon steaks are a must for this occasion so that's the one I will try first for xmas dinner.

            Quick and easy to get together with not too many fancy ingredients leaving plenty of time for a slow glass or two of something sweet and fizzy. Not lemonade I hasten to add !!! hic

            Have to go and raid the kitchen now cos I've come over all hungry.

              My favourite salmon recipe at the moment is for Mediterranean Salmon.
              Saute some onion and red peppers in some olive oil with some crushed garlic, put the salmon steaks in a dish, onions and red peppers on top along with some sliced tomatoes, balsamic vinegar, a bay leaf, some fresh dill and shredded basil leaves, season, drizzle with some olive oil. Cover the dish with foil and bake at 190/Gas 5 for about 20 - 25 minutes. Looks and tastes amazing. Even OH likes it, and he thinks fish is for when you're not really hungry!

                  This is my favourite salmon recipe which I was given by our fish man:

                  SWEET SALMON EN CROÛTE

                  INGREDIENTS:
                  2 salmon portions
                  2oz unsalted butter, softened
                  2 pieces stem ginger, drained of syrup and finely chopped
                  ½oz sultanas or raisins
                  pinch ground mace - I always use nutmeg here as I don't keep mace in!
                  1lb puff pastry
                  1 egg, beaten
                  salt and freshly milled black pepper

                  METHOD:
                  1. Put the softened butter into a bowl, add the ginger, sultanas, mace and seasoning, mix well.
                  2. Roll out half the pastry to the size of an A4 sheet.
                  3. Place the salmon portion in the centre. Spoon the butter mixture onto the fish. Brush the pastry around the fish with the egg mixture. Place the second portion of salmon on top of the butter to make a sandwich. Roll out the rest of the pastry to a similar size and place over your creation.
                  4. Push together squeezing out all of the air. Then go around the edges with a fork, pressing down to seal the join. Trim the edges neatly and brush the whole salmon en croûte with the remaining egg mixture. Refrigerate for an hour.
                  5. Pre-heat oven to 200oC and cook salmon on a greased sheet of foil for 30 minutes, or until the pastry crisps up.
