  • Spicy turkey tortillas

    Ingredients

    1 spray low-fat cooking spray
    1 medium onion(s)
    1 clove garlic
    100 g mushrooms 400 g Tesco Italian Style Mixed Beans
    1 large can canned tomatoes 1 teaspoon chilli powder
    225 g roast turkey
    2 tablespoon fresh coriander 1 pinch salt 1 serving pepper 4 medium soft tortilla(s) 25 g half-fat cheddar cheese

    Instructions
    • Heat a large frying pan and mist it with low fat cooking spray. Add the onion, garlic and mushrooms and sauté them until softened, about 5 minutes.
    • Add the mixed beans, tomatoes and chilli powder to the frying pan. Cook for about 10 more minutes, stirring often, until the liquid has reduced down. Stir in the turkey and coriander. Season.
    • Lay the tortillas onto four heat resistant plates and divide the filling equally between them. Scatter the grated cheese on top and grill for 3-4 minutes until the cheese has melted.

      Cook's Tip: A home made salsa makes the perfect accompaniment. Just mix together finely chopped red onion, cucumber, tomatoes, coriander or parsley and flavour with lime juice, Tabasco sauce, salt and pepper.

    We made this last night, but instead of turkey (We ran out) (thank goodness),, we used chicken fillets, was absolutely divine, had to add a bit of fresh chopped chilli though !!

      I make a veggie version of something a bit like this. No meat (obviously) but add peppers and any other appropriate veg and like Chillimad a couple of real chillies also. You can make a big pan of it and freeze for another day and it's even better value if you use dried beans.

      Some of us live in the past, always talking about back then. Some of us live in the future, always planning what we are going to do. And, then there are those, who neither look behind or ahead, but just enjoy the moment of right now.
