  • Carrot and Coriander Soup (this is yummers)

    Hey dudes and dudettes

    Me and mum made this soup today to eat as a starter tomorrow (New years day!) After the soup we are having chicken and bacon pie then tangy fruit sorbet (If it works I'll put the recipe on cos it's dead easy freezy)

    Anyhoo
    Ingredients
    125g red lentils
    1 bay leaf
    300ml water
    250g carrots, sliced
    150ml orange juice
    450ml vegetable stock
    2 tablespoons chopped fresh coriander
    freshly ground black pepper


    How to make this Brilliento Soup

    1. Place the lentils in a saucepan with the bay leaf & the water & bring to the boil.
    2. Reduce the heat, cover & simmer for about 20 minutes until the lentils have softened.
    3. Cook the carrots in the orange juice & stock until tender. Drain the lentils if necessary & discard the bay leaf.
    4. Place the lentils, the carrots & their cooking liquid in a blender or food processor & puree until smooth.
    5. Stir in the coriander & season to taste with pepper.
    6. Reheat the soup & serve with fresh bread.

    I love carrot and corriander soup and used to buy it in tins, untill I could no longer get it that sounds lovely will try it in the new year

        Your recipe sounds gorgeous. Will give it a go as we often visit a garden centre where in the cafe they serve carrot and coriander soup with fresh bread and my other half loves it. I have tried it to make it before but failed. I did not use the orange juice though which is probably the difference. Is it freezable?. I have just had a go at baking my own bread and it was a great success so the soup to go with it would be great.

          I don't see why it wouldn't freeze cos there is no cream in it

              I to am a happy bunny now. I tried your recipe and what a winner. My other half and daughter in law both said it was really good. It earned me loads of visits to the lottie now. A real success and thankyou for sharing it with all
