  • Jamie's Cranberry Sauce

According to an article in the paper before Christmas, Jamie Oliver's recipe for Cranberry Sauce is superb - all caramalised sugar and lovely things. I didn't get round to making it for Christmas dinner, but would like to make it now.

Jamie's website is tightlipped on the recipe (fair enough, they want you to buy the book), and it's not come up on a google search.

Is there a kind grape who wouldn't mind posting up the recipe if they have it? It will save me standing in WH Smith scribbling it down in a surruptitious manner!

I just pick my cranberries and top up the amount if needed with bought ones.

    500g cranberries
    200g of caster suger
A splash of orange juice or water.

Put all in a pan and cook for 5 -10 mins until the cranberries start to burst.

For a posh version use light muscavado suugar instead of caster and port instead of orange juice / water.

It will keep in the fridge for a fortnight or in jars (treated like jam) for a year.

Oh! I forgot to say thank you for this!

I'm going to try PW's recipe and the Jamie on (why couldn't I find that vid when I did a search on his site? )

The Jamie word doc from Moggie is brill - it includes all the piccies of the recipes too - literally the book without the binding. Fabulous.
