Spanish Tomato Chutney
This is one my mum recommends, haven't made it myself but probably will do now I have picked all the toms. Sorry it's in old money
3lb green toms (skinned), 1 red pepper, 1lb onions, 2tbsps salt, 1 1/2 pints vinegar, 1tsp mixed spice, 1 tsp pepercorns, 1 tsp mustard seed, few chillis, 1 tsp cloves, 12 oz sugar.
1 Slice toms and red pepper and chop onion finely.
2 Sprinkle with salt and leave for several hours.
3 Drain well.
4 Put into a preserving pan with vinegar and spices tied in muslin.
5 simmer steadily for 10 mins.
6 Add the sugar and coninue simmering for 15-20 mins.
7 Pour into jars and seal down.
This is less soft than an ordinary chutney.
I suppose you could leave the spices loose in the pan if you wanted but they will be a bit crunchy.Bright Blessings

If at first you don't succeed, open a bottle of wine.
