  • Roasting squash seeds

    Just had a quick search, and I mean quick - so apologies if it's been mentioned before, but last night we roasted some butternut squash to have with dinner. At the same time, rather than throwing the scooped out pulp and seeds away - like we usually do, I removed the seeds and put them on the tray with the two halves of squash having seen Jamie do it recently.

    A few minutes later I was munching on the roasted seeds whilst cooking dinner. Really rather bladdy yummy they were.

    Did you have to wash them first? MIne are always such a sticky mess....

      No, just pulled them out. I think the coating may have added to the flavour. Nice and golden.

          No more than ten minutes - 180c.

          I could start to smell them, just kept an eye on them as I was doing other things in the kitchen at the same time.

            Right...I'm gonna pretend I'm Andi now,as it's probably a really stoopid question...so in a butch voice...Do you have to peel them once roasted!!...I did some last(last)year & the skin bits remained really tough & had to pel each one...was a bit tedious so I never tried again...maybe I did it wrong???...or do different varieties roast differently?

              Jamie says no - but to be honest, we just scoop out the flesh once roasted, it goes kinda "mushy" anyway.

              If we're roasting butternut squahs chunks, then I simply slice it up, and then slice off the skin at the same time.

              Slice the squash in half, then lat flat side down and slice off the head and tail. Then I slice it into 1 inch think slices. I then lay each slice on its side and slice off the skin.

              Make sense?

                  Aha, in that case no I just scopped them out of the squash, pulled the seeds out of the stringy pulpy syuff and just simply laid them in a baking sheet.

                  I guess you could sprinkle some "seasoning" on them - but of ground cumin, or chilli flakes...

                    I had the same thing "Andi?" I haven't tried them since either. Perhaps we used the wrong sort of squash seeds or perhaps didn't cook them for long enough. I might have another go spurred on by Wayne.

                      We've still got a few pumpkins left which rather desperately need sorting...so I shall give it a go meself!!....men 'eh!?

                              I made some....chilli...very nice eat them with the husks for a week till someone said take the seed out....bit messy but very nice.
