  • What can I make for dinner from this lot?

    Have just harvested the winter produce from the bottom of the garden:-
    several beetroot (baby to medium)
    loads of baby carrots
    swiss chard

    so what can I turn it into for dinner?

    I also have dried chillis, garlic, onions, leeks, and other basics.

    Please help I have no imagination today!

    oohh the first three make a lovely crunchy salad, keep the beetroot raw and grate them and the carrots, and you could make a nice chilli and garlic dressing to go on it.

      That sounds very tasty, but OH will think that is just his starter. Any other ideas?

        Roast the carrots, beetroot and garlic cloves?
        I love roasted baby carrots.

          Stir fry (it's what I'm having for dinner). Thinly slice beetroot, onions, and carrots, cook for about three minutes with a bit of a oil over a med-high heat stirring continuously. Add in chard stems, cook for another minute or two, then add in chopped chard leaves. When the leaves wilt add a dash of soy sauce and serve over rice.

            Sounds like Goth Casserole to me [goth because the beetroot turns everything blood red].

            Or boil beetroot, and once cooked, cool and chop into cubes. Mix in mayo and a little cumin.

            Then, make a curry and rice and have the beetroot salad as a side dish.

            Or just roast the lot and roast some spuds, and have a roast mish mash with protein of your choosing.

              Hmmm, I think I will roast them, thank you for all the lovely ideas. . . I will let you know how it turns out.

              Some of the baby carrots might have got eaten. . . .

                I'd roast the root veg, then make up a pasta sauce with everyone and some passata.
